Bananas are a staple in my house. Nothing better than an easy to eat and tasty fruit that you can carry with you and the “wrapping” is biodegradable! And, it is something that my kids will actually eat and will eat without complaints.

I love adding bananas to recipes. They add plenty of flavor and nutrients. Our favorite recipe here is banana bread and I just made banana chocolate chip muffins tonight. My kids love them and I feel just a little better that not only are they homemade, they are a little bit healthy. It is the little things that make me feel like I am doing a decent job at this mother thing.

I love making breakfasts overnight in the slow cooker. It seems like mornings are a little bit busy between two kids getting ready for school, feeding the dog and then getting myself ready to go to work. Having breakfast made and ready when I get up is just a big plus in my day.

Crock-Pot Banana Oatmeal is one that my kids love to eat also. I like to fix a couple bowls for them and add in a little cinnamon on top and they will eat it before they head for the bus. I can put mine in a Tupperware container and take it to work and eat it at my desk.

Ingredients
  

  • 2 Cups Quick Cooking Oats
  • 2 Cups Milk
  • 3 Medium Bananas smashed
  • 4 Teaspoons Brown Sugar
  • 2 Teaspoons Ground Cinnamon
  • 1 1/2 Teaspoons Vanilla Extract
  • 1 Teaspoon Ground Nutmeg

Instructions
 

  • Combine all the ingredients in a 3 qt or larger crock-pot.
  • Cover and Cook on LOW for 2 hours.
  • Remove the crock from the heating element. Serve.
