This recipe calls for frozen spinach. I discovered the joy of canned spinach. Just like Popeye use to eat. My local store had a sale on numerous canned items. I was looking for canned carrots for the neighbor for his carrot rice beef recipe he makes. It is a strange combination, but is really tasty! Anyway, I spotted canned spinach.

For $.29 a can, I had to try it. One can was almost the same amount as one bag of frozen spinach. You have to squeeze the excess water out of the spinach, but all in all my final opinion is now canned spinach. No need to store in the freezer, and all it takes is a shelf.

Add all the ingredients and let the slow cooker do the work for you. I used a little French Bread for a side. The soup turned out delicious. I had enough leftovers for two days of work lunches.

Ingredients
  

  • 1 19 oz Frozen Cheese Tortellini
  • 1 10 oz Frozen Spinach squeeze any excess liquid
  • 2 10.5 oz Italian Style diced tomatoes
  • 4 cups Chicken Broth
  • 1 8oz Cream Cheese cubed
  • 1 16 oz Pork Sausage browned, crumbled and drained

Instructions
 

  • On the stove top, brown the sausage. Drain any drippings.
  • Add the chicken broth, cream cheese, cooked sausage, Italian style diced tomatoes and the spinach to a 5 qt or larger slow cooker.
  • Cover and cook on LOW for 4 hours.
  • Add the tortellini at 4 hours and cook for an additional 1 hour on LOW.
  • Remove from the heat and serve.
