Crock-Pot Hawaiian Pineapple Chicken

Chicken is an easy and popular type of recipe to cook in the slow cooker. It is also easy to over cook chicken in the slow cooker. Slow cookers can cook at a different temperature. I have an older crock-pot I got from my dad’s house. It cooks at a lower temperature then my newer model slow cooker. I know that if I use the older crock-pot, I need to adjust the time appropriately.

I used chicken quarters for this recipe. You can substitute chicken breasts if you prefer boneless chicken. Adjust the time down a little with boneless chicken. Chicken needs to cook to an internal temperature of 165 degrees.

I serve with a side of white rice. You could also use brown rice instead. If you have any leftovers, pick the meat from the bones and they make a great sandwich on toasted bread.

Ingredients
  

  • 4 chicken quarters
  • 1 20oz can of pineapple chunks and juice
  • 1 medium Yellow Onion chopped
  • 3 tablespoon Honey
  • 2 tablespoons Soy Sauce
  • 1/2 cup Light or Dark Brown Sugar
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced

Instructions
 

  • In a small bowl, mix honey, onion, soy sauce, brown sugar, grated ginger close and pineapple chunks.
  • Place the chicken in a 4 qt or 5 qt slow cooker.
  • Pour the mixed ingredients over the top of the chicken.
  • Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  • Serve with a side of rice.
