Crock-Pot Peaches and Cream Oatmeal

One of my favorite items for breakfast is oatmeal. I love how easy it is to make oatmeal. The added healthiness is always a plus. There are many fruit and spice combinations that you can make with oatmeal. Of course, this depends on the items in your pantry and in your fridge.

This is a classic Peaches and Cream Oatmeal made in the slow cooker. If you have read anything else I have written, you will know that adding cream cheese to a recipe just makes everything better! I love the creaminess that it adds to sauces and oatmeal.

This recipe only needs 6 tablespoons of cream cheese and I used the whipped cream cheese that comes in a tub. The whipped is lighter and gives this more of a “cream” to the oatmeal.

When making oatmeal in the slow cooker, always use steel cut oats. Steel cut oats are only cut a couple of times making them needing a longer time to cook. They also do not get as mushy in the slow cooker.  Never use old fashion oats or quick oats in the slow cooker as they will get very mushy and even burn.

Steel cut oats and peaches combine with whipped cream cheese and some brown sugar to make this easy Peaches and Cream Oatmeal in the slow cooker.

Ingredients
  

  • 3 Medium Peaches peeled, pitted and cut into chunks
  • 1/2 Cup Brown Sugar packed
  • 3 Teaspoons Ground Cinnamon
  • 1 Cup Steel Cut Oats
  • 2 Cups Milk
  • 1 Cup Water
  • 1 Teaspoon Pure Vanilla Extract
  • 6 Tablespoons Whipped Cream Cheese

Instructions
 

  • In a medium bowl, toss the peaches, sugar and cinnamon. Add these to a 4 qt or 5 qt slow cooker.
  • Mix in the steel cut oats, milk, water and vanilla extract and stir well.
  • Spoon the cream cheese on top evenly.
  • Cover and cook on LOW for 8 hours.
  • Enjoy!
