
Crock-Pot Pumpkin Pie Oatmeal
I home can and freeze pumpkin every year. We have a local orchard that sells pumpkins at a decent price. I like to get 4 or 5 and cook them in the slow cooker and then puree the pumpkin. I freeze pumpkin puree and can chunks of pumpkin. I try to can and freeze in amounts that are easy to use. So enough for a pumpkin pie or enough for two pumpkin pies.
Pumpkin puree can be used in many recipes like muffins and coffee cakes and dump cakes. And, it makes great pumpkin pie oatmeal! This cooks up nicely in the slow cooker overnight. Make sure you use steel cut oats.

Ingredients
- 2 Cups Steel Cut Oats
- 7 Cups Water
- 1 1/2 Cups Canned Pumpkin Puree
- 1 Tablespoon Pumpkin Pie Spice
- 1 Tablespoon Pure Vanilla Extract
- 1/4 Teaspoon Kosher Salt
Instructions
- Add all the ingredients to a 4 qt crock-pot and stir.
- Cover and Cook on WARM for 8 hours.
- Enjoy!
