One of my favorite sandwiches is a Reuben. Not just any Reuben, but one made by my local country grocery store’s deli. It takes 15 minutes to have one made, but it is definitely worth the wait. They toast the marble rye bread and slice corned beef right there for the sandwich.

The corned beef is layered on the sandwich making it pretty thick. The end result is this mouth watering, delicious Reuben sandwich. And to think, I am one that can not eat sauerkraut but will it if is on a Reuben sandwich.

This Crock-Pot Reuben Dip is that sandwich in an easy to make and tasty slow cooker dip.

You can make and cook your own corned beef but I find it easier to get sliced corned beef at the deli. You can also find it in the prepackaged lunch meat section. It is cheaper in the prepackaged section, and will give a good flavor to this dip.

Sauerkraut can be found in the produce section in a bag. I only find it there when it it is close to St Patty’s Day. Otherwise, look in the canned good sections for a can of sauerkraut.

I rinsed my Sauerkraut and squeezed out the excess water before adding it to this recipe. Some prefer the stronger taste of the sauerkraut without rinsing it. But me, I was trying to get my kids to try this dip.

Ingredients
  

  • 2 Cups Cooked Corn Beef chopped
  • 1 16 oz package Sauerkraut drained
  • 1 8oz Cream Cheese cubed
  • 1/3 Cup Thousand Island Dressing
  • 2 Cups Mozzarella Cheese shredded

Instructions
 

  • Add all ingredients to a 3 qt or larger crock-pot and stir well.
  • Cover and Cook on LOW for 2 hours or until the cream cheese is melted.
  • Serve with crackers or wedges of rye bread.
