Crock-Pot White Cheddar Cauliflower Soup

White cheddar cheese is one of my favorite types of cheese. White cheddar tends to be a hard cheese that is full of flavor. I love making cheese boards for appetizers for friends and I always include a good hard white cheddar to put on crackers or eat alone.

A good white cheddar makes this soup. I like the Cracker Barrel brand cheese but you can also get a good quality white cheddar near the deli counter at our local super market. The Cracker Barrel brand is decently priced and the flavor of the cheese is point on. You can slice the cheese or shred it prior to adding it to the crock-pot to allow the cheese to melt evenly.

You can change this recipe p a little and use a smoked white cheddar cheese. The smoked cheddar just adds a hearty and smokey flavor to the soup.

I am a big fan of Broccoli Cheddar Cheese soup and this is similar but just a little different. I do tend to make some of my favorite recipes on a regular basis and this is one that I like to add in from time to time.

Ingredients
  

  • 1 small Cauliflower Head broken into small florets
  • 1 small Yellow Onion diced
  • 2 cloves garlic minced
  • 3 cups vegetable stock
  • 1 1/2 cups white cheddar cheese shredded
  • 1 cup Heavy Cream

Instructions
 

  • Add the ingredients to the slow cooker.
  • Cover and cook on LOW for 5-6 hours. Stirring occasionally.
  • Serve in bowls with slices of French bread.
