  • 7 Cups Sliced Zucchini about 6 whole
  • 1 Small Yelllow Onion
  • 1 Cup Chicken Broth
  • 1/2 Cup Sour Cream
  • 2 Tablespoons Stick Butter
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Teaspoon Kosher Salt
  • 2 Cups Crushed Saltine Crackers

Instructions
 

  • Place zucchini in a microwave safe dish and add the butter. Heat for 5 minutes. Drain any liquid
  • Place the zucchini and the onion in the bottom of a 4 qt or larger slow cooker.
  • Mix the crushed crackers, cheese, salt, sour cream and chicken broth. Pour over the zucchini.
