Crock-Pot Baked Peach Oatmeal

My favorite dish for breakfast is oatmeal. I like to cook a homemade pot on the stove and add in chopped fresh fruit or just a little maple syrup and milk. But, I have never tried a baked oatmeal before but I have heard they are really good and easy to make.

I used my casserole crock-pot for this recipe. I love that the casserole is the same size as my casserole dish for the oven and it is a crock-pot that means my kitchen does not get hot from the oven.

Fresh fruit is always a plus to use in any recipe. I used a couple fresh peaches the kids had not eaten and sliced the peaches carefully removing the pit. You can peel prior to slicing, or just leave the peel on the peach. Don’t have fresh peaches, frozen peaches work just as good in this recipe. I would thaw just slightly prior to adding them to this recipe.

The end result has just enough peaches in each bite and the oatmeal is tasty and delicious. I sliced the oatmeal in squares and add a little milk in a bowl around the Baked Oatmeal. Very tasty!

Instructions
  1. In a medium bowl, mix together the oats, brown sugar, baking powder, salt, and cinnamon. Set aside.
  2. In another medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Arrange the chopped peaches in the bottom of the crock-pot casserole dish.
  4. Evenly layer the dry oat ingredients on top of the peaches.
  5. Pour the liquid ingredients on top of the oats and use a spatula to make sure the liquid ingredients and the dry ingredients mix together.
  6. Cover and Cook on HIGH for 2 hours or until the center has set.
  7. Cut the baked oatmeal into squares and spoon into bowls. Pour a little milk around the oatmeal and enjoy!
