Crock-Pot Bacon and Spinach Dip

As I am sure you know by now, my kids bring there friends home a lot. I prefer it this way as I know what they are doing and who they are with. There is normally an “extra kid” with us at a game or out shopping or just for dinner.

My kids and their friends always get to try new recipes and give me their opinions.

I used my 4 qt slow cooker for this Crock-Pot Bacon and Spinach Dip. Cook the bacon before either in the oven (400 degrees for 20 minutes) or on the stove top. Let the bacon cool and pat dry to soak up more of the bacon drippings. Chop the bacon and add to the slow cooker with the remaining ingredients.

Put the lid on the slow cooker and cook on HIGH for 2 hours stirring occasionally. I toasted some pieces of bread and chopped them into bite site but dippable pieces.

I let the kids dig into the dip. Definitely was a hit with the kids with both the toasted bread pieces and tortilla chips.

Any leftovers can be stored in an air tight container in the refrigerator for 5-7 days. The leftovers reheat without an issue.

Ingredients
  

  • 4 oz Cream Cheese softened
  • 1 10.5 oz Can of Diced Tomatos and Green Chiles
  • 1 12 oz Package of Bacon cooked, drained and diced
  • 1 10 oz Frozen or Canned Spinach excess water squeezed out

Instructions
 

  • On the stove top, cook the bacon. Drain any drippings and dice.
  • Add the cooked bacon and the remaining ingredients to the slow cooker.
  • Cover and cook on HIGH for 2 hours.
  • Serve on warm from the slow cooker with toasted bread pieces or tortilla chips.
